A simple yet flavorful roasted tomato sauce inspired by summer gardens, perfect for pasta or pizza toppings.

Ingredients

  • 2 pounds ripe paste tomatoes
  • 1/4 cup high heat oil (e.g., Avocado Oil)
  • 2 tablespoons balsamic vinegar
  • 56 cloves garlic (peeled and whole)
  • 1/2 cup fresh basil leaves (torn if large)
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon freshly ground pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the ripe tomatoes thoroughly and cut them into halves or quarters.
  3. Arrange the tomatoes on a rimmed baking sheet, spaced out, and add the whole garlic cloves and torn basil leaves.
  4. Drizzle with high heat oil and balsamic vinegar, then season with sea salt and pepper.
  5. Roast in the oven for 45 minutes to 1 hour until tomatoes are soft and caramelized.
  6. Cool for 15-20 minutes before blending.
  7. Transfer the roasted ingredients to a blender and blend until smooth, adjusting seasoning as needed.

Notes

For chunkier sauce, blend less. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
