Tender steak bites seared in rich garlic butter, paired with fresh zucchini for a quick and comforting dinner.

Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels. Season them generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the steak bites in a single layer for 1-2 minutes per side until browned. Remove from skillet and set aside.
  4. Melt butter in the same skillet.
  5. Sauté the minced garlic until fragrant, about 30 seconds.
  6. Cook the zucchini, stirring, until tender-crisp (3-5 minutes).
  7. Combine everything in the skillet, tossing to coat with the garlic butter.
  8. Final heating for an additional 1-2 minutes until steak is heated through.
  9. Garnish with fresh parsley if desired, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat.
