A simple yet delicious dish of roasted baby potatoes and mixed vegetables, seasoned with garlic and herbs.

Ingredients

  • 1 pound baby potatoes, halved
  • 2 cups mixed vegetables (bell peppers, carrots, zucchini)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried herbs (rosemary, thyme, oregano)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the halved baby potatoes and mixed vegetables in a large bowl.
  3. Drizzle the olive oil over the potato and vegetable mix.
  4. Add in the minced garlic and dried herbs, seasoning with salt and black pepper.
  5. Toss everything together until evenly coated.
  6. Spread the mixture in a single layer on a baking sheet.
  7. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  8. Serve hot as a side dish and enjoy!

Notes

Cut the potatoes and veggies into similar sizes for even cooking. Feel free to use fresh herbs if you prefer.
