Tender baby carrots drizzled with a sweet and savory honey garlic glaze, roasted to perfection.

Ingredients

  • 1 pound of baby carrots, washed and peeled
  • 3 tablespoons of honey
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of fresh thyme leaves (or 1/2 teaspoon of dried thyme)
  • Salt and pepper, to taste
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together the honey, olive oil, minced garlic, thyme, salt, and pepper in a large mixing bowl.
  3. Coat the baby carrots thoroughly in the honey garlic mixture.
  4. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  5. Spread the coated carrots out in a single layer on the prepared baking sheet.
  6. Roast the carrots for about 20-25 minutes, tossing halfway through.
  7. Cool the carrots for a few minutes, then garnish with fresh parsley and serve warm.

Notes

For best results, choose fresh, high-quality ingredients. Consider adding a pinch of red pepper flakes for heat. Store leftovers in an airtight container in the refrigerator for up to 4 days.
