A comforting dish of chicken breasts and baby potatoes slow-cooked in garlic and parmesan, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the potatoes and garlic: Wash and halve the baby potatoes. Mince the garlic cloves and set aside.
  2. Season the chicken: Rub each chicken breast with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes if using.
  3. Layer the ingredients in the crockpot: Place the halved potatoes at the bottom of the crockpot, then lay the seasoned chicken breasts on top.
  4. Add the chicken broth: Pour the chicken broth over the chicken and potatoes to ensure everything is well coated.
  5. Sprinkle in the garlic and parmesan: Evenly distribute the minced garlic over the chicken, then shower with grated parmesan cheese.
  6. Cook the mixture: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and potatoes are fork-tender.
  7. Serve and enjoy: Carefully remove chicken and potatoes from the crockpot and spoon remaining sauce over the top.
  8. Garnish: Sprinkle with fresh parsley before serving for added color and flavor.

Notes

Use a meat thermometer to check for doneness. For a dairy-free version, skip the parmesan or use a dairy-free alternative.
