A vibrant and flavorful Greek Chicken Bowl featuring tender marinated chicken, quinoa, fresh vegetables, and feta cheese.

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Marinating the Chicken: In a large bowl, combine diced chicken with olive oil, red wine vinegar, oregano, salt, and pepper. Allow the chicken to marinate for at least 30 minutes to soak in those delicious flavors.
  2. Cooking the Chicken: Heat your skillet over medium heat and let it warm up. Add the marinated chicken and cook until it’s fully cooked through, about 7-10 minutes.
  3. Assembling the Bowls: In beautiful serving bowls, layer the cooked quinoa first, followed by the warm chicken. Add in cherry tomatoes, cucumber, red onion, olives, and finish off with crumbled feta cheese.
  4. Drizzling and Serving: For an extra pop of flavor, drizzle with additional olive oil and red wine vinegar if desired. Serve immediately.

Notes

For a vegetarian option, swap chicken for chickpeas. Leftovers can be stored in the refrigerator for up to 3 days.
