  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • Fresh parsley for garnish
  • Tzatziki sauce for drizzling (optional)

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Marinate the chicken breasts in this flavorful mixture for at least 30 minutes.
  2. Preheat the grill: Preheat the grill or a grill pan over medium-high heat.
  3. Grill the chicken: Cook chicken for 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Rest and slice: Let the chicken rest for a few minutes before slicing.
  5. Assemble the bowls: Layer the cooked rice or quinoa, followed by sliced chicken, cherry tomatoes, cucumber, red onion, feta, and olives.
  6. Final touch: Drizzle with tzatziki sauce if desired, and garnish with fresh parsley.

Notes

For deeper flavors, marinate the chicken overnight. Substitute quinoa with brown rice or cauliflower rice for variations.
