A vibrant and flavorful dish featuring marinated chicken served with fresh veggies, feta cheese, and tzatziki sauce.

  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Fresh parsley, chopped
  • 1/2 cup Tzatziki sauce

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Add the chicken breast, ensuring it’s thoroughly coated. Cover and let it marinate for at least 30 minutes.
  2. Grill or Pan-Cook the Chicken: Heat your grill or pan over medium-high heat and add the marinated chicken. Cook for about 6-8 minutes on each side, or until cooked through.
  3. Chop the Fresh Veggies: While the chicken cooks, chop the cucumber, tomatoes, and red onion into bite-sized pieces.
  4. Assemble the Bowls: In a bowl, create a base with the freshly chopped veggies.
  5. Top with Feta and Parsley: Slice the cooked chicken and arrange it on top of the veggies. Crumble feta and sprinkle with fresh parsley.
  6. Serve with Tzatziki: Add a generous portion of tzatziki sauce on the bowl, or serve it on the side.
