Delicious Greek chicken bowls with marinated grilled chicken, colorful vegetables, and tangy feta cheese, perfect for a healthy meal.

Ingredients

Scale
  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup kalamata olives
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken breasts with olive oil, minced garlic, dried oregano, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.
  2. Grill or Sear the Chicken: Preheat your grill or a skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked.
  3. Rest the Chicken: Once cooked, remove the chicken from the heat and let it rest for a few minutes.
  4. Layer the Bowl: In serving bowls, start layering! Add a base of cooked rice or quinoa, then top with sliced chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and kalamata olives.
  5. Finish with Freshness: Drizzle your beautifully assembled Greek chicken bowls with fresh lemon juice just before serving.

Notes

For extra flavor, add fresh herbs like mint or dill. Take care to store leftovers separately for freshness.
