A refreshing Greek Pasta Salad bursting with vibrant flavors and perfect for summer gatherings.

Ingredients

  • 8 oz pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Once it’s al dente, drain and let it cool.
  2. Combine the cooled pasta, halved cherry tomatoes, diced cucumber, finely chopped red onion, Kalamata olives, and crumbled feta cheese in a large bowl.
  3. Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Serve the salad chilled or at room temperature.
