A refreshing and colorful Greek Pasta Salad, perfect for summer gatherings and picnics.

Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil the pasta of your choice according to the package instructions. Once done, drain it well and set it aside to cool.
  2. Gather the Veggies: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, red onion, olives, and the crumbled feta cheese.
  3. Whisk the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  4. Dress the Salad: Pour the dressing over the pasta salad and gently toss everything together until well coated.
  5. Serve and Enjoy: Serve chilled or at room temperature, alongside grilled meats or as a stand-alone dish.

Notes

Make sure your pasta is al dente to prevent it from becoming mushy. Add feta just before serving to keep it fresh.
