  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper, then place them skin-side down on a lined baking sheet. Bake for 12-15 minutes until cooked through and flaky.
  2. While the salmon is baking, prepare the quinoa according to package instructions. Typically, this involves rinsing, boiling in water or broth, and letting it simmer until fluffy.
  3. In a large bowl, mix together the cooked quinoa, halved cherry tomatoes, diced cucumber, thinly sliced red onion, pitted Kalamata olives, and crumbled feta cheese.
  4. In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper to create the dressing.
  5. Once the salmon has finished baking, remove it from the oven and let it rest for a minute. Gently flake the salmon into pieces and add it to the bowl of quinoa and veggies.
  6. Drizzle the dressing over the salad and toss gently to combine. Garnish with fresh parsley and serve your bowls immediately.
