A vibrant green ombre cake adorned with a glossy mirror glaze, perfect for any celebration.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • Green food coloring
  • 1 cup sugar (for mirror glaze)
  • 1/3 cup water
  • 1 cup sweetened condensed milk
  • 6 gelatin sheets
  • 1 cup dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in the milk and vanilla extract.
  4. In another bowl, mix together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly into three bowls. Tint each bowl with a different shade of green food coloring—light, medium, and dark.
  6. Pour each batter into the prepared pans, starting with the darkest shade at the bottom and the lightest at the top.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. Soak the gelatin sheets in cold water. In a saucepan, combine sugar and water; bring to a boil.
  9. Remove the saucepan from heat, add the sweetened condensed milk, and stir in the gelatin until dissolved. Then add the dark chocolate and mix until smooth.
  10. Once the cake layers have cooled completely, stack them on top of each other, ensuring the darkest layer is at the bottom. Pour the mirror glaze over the top, allowing it to beautifully drip down the sides.
  11. Chill the assembled cake in the refrigerator until ready to serve.

Notes

Feel free to change the food coloring for different occasions. You can bake the layers a day in advance and store them wrapped in plastic.
