A delightful combination of tender grilled chicken and crisp romaine lettuce, dressed in creamy Caesar dressing.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups romaine lettuce, chopped
  • 1 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • Croutons for topping

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil and season them generously with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Let the chicken rest for a few minutes before slicing.
  5. Combine the chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese in a large bowl.
  6. Top the salad with sliced grilled chicken.
  7. Sprinkle croutons generously on top.
  8. Serve the salad fresh immediately.

Notes

For best results, marinate the chicken in Caesar dressing a couple of hours before grilling. Leftovers can be stored in an airtight container in the fridge.
