Juicy marinated chicken kabobs grilled to perfection, alternating with vibrant vegetables for a colorful and flavorful summer dish.

  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 6 wooden skewers, soaked in water for 30 minutes
  • 1 bell pepper, cut into squares
  • 1 onion, cut into squares
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Whisk together the marinade by mixing olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
  2. Marinate the chicken by adding it to the marinade and letting it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Assemble the kabobs by threading chicken, bell pepper, onion, and zucchini onto skewers, alternating ingredients.
  5. Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender.
  6. Serve with your choice of sauce or side.

Notes

Soak wooden skewers to prevent burning. Don’t crowd the kabobs on the grill for even cooking.
