Ingredients

  • 2 chicken breasts, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bell peppers, cut into chunks
  • 1 onion, cut into chunks
  • Skewers (wooden or metal)

Instructions

  1. Prepare the chicken by cutting it into bite-sized, 1-inch pieces.
  2. Whisk the marinade by combining olive oil, minced garlic, lemon juice, salt, and pepper.
  3. Marinate the chicken pieces in the marinade for at least 30 minutes.
  4. Chop the bell peppers and onion into sizable chunks.
  5. Assemble the skewers by threading marinated chicken and veggies alternately.
  6. Preheat the grill to medium heat, about 10 minutes.
  7. Grill the skewers for 10-15 minutes, turning occasionally.
  8. Serve hot, garnished with fresh herbs or lemon juice.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Customize the marinade with herbs for extra flavor.
