Tender marinated chicken skewers bursting with flavor, perfect for summer barbecues.

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste
  • Assorted vegetables for skewering (bell peppers, onions, zucchini)

Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. Mix olive oil, minced garlic, lemon juice, salt, and pepper in a bowl.
  3. Add the chicken pieces to the marinade and mix well; let it sit for at least 30 minutes.
  4. Thread marinated chicken and assorted vegetables onto skewers, alternating for a colorful presentation.
  5. Preheat your grill to medium-high heat.
  6. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through.
  7. Serve warm, perhaps with a side of tzatziki or a fresh salad.

Notes

Soak wooden skewers in water for about 30 minutes before grilling to prevent burning. Feel free to add more vegetables or fruit for variation.
