These flavorful grilled steak fajitas are perfect for a backyard feast, packed with marinated flank steak, sautéed peppers and onions, and wrapped in soft tortillas.

Ingredients

  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 4 flour tortillas
  • Sour cream and salsa for serving

Instructions

  1. Marinate the flank steak. In a bowl, combine olive oil, lime juice, chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. Coat the flank steak in the marinade and let it sit for at least 30 minutes to absorb those beautiful flavors.
  2. Preheat the grill. While the steak is marinating, heat a grill or grill pan over medium-high heat.
  3. Grill the steak. Once the grill is hot, place the marinated flank steak on it. Cook for about 4-5 minutes on each side for a perfect medium-rare.
  4. Let the steak rest. After grilling, remove the steak from the grill and let it rest for a few minutes.
  5. Sauté the vegetables. In the same skillet, sauté the sliced bell pepper and onion until tender for about 5-7 minutes.
  6. Slice the steak thinly against the grain.
  7. Assemble your fajitas by taking a warm tortilla, adding slices of steak and sautéed veggies, and finishing it off with a dollop of sour cream and a spoonful of salsa.

Notes

For added flavor, let the steak marinate longer if you have time; overnight marination works wonders. Use a meat thermometer to check the steak’s doneness; 130°F is perfect for medium-rare.
