2 medium zucchinis, sliced into long strips
1 can (15 oz) chickpeas, drained and rinsed
1 cup feta cheese, crumbled
4 large tortillas or wraps
1 cup plain Greek yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons fresh dill or parsley, chopped
Salt and pepper, to taste
Instructions
Prepare the Zucchini: Preheat your grill or grill pan over medium-high heat. Slice the zucchinis into strips, toss in a bowl with olive oil, salt, and pepper.
Grill the Zucchini: Lay zucchini strips on the hot grill and grill for about 3-4 minutes per side. Remove and set aside.
Make the Herbed Yogurt: In a small bowl, mix Greek yogurt, lemon juice, chopped herbs, and a pinch of salt.
Assemble the Wraps: Start with a tortilla, layer grilled zucchini, chickpeas, feta cheese, and drizzle herbed yogurt on top.
Wrap it Up: Fold in the sides of the tortilla and roll tightly. Optionally toast on grill for extra warmth.
