Grilled Zucchini and Feta Chickpea Wrap with Herbed Yogurt

A vibrant wrap filled with grilled zucchini, chickpeas, feta, and a refreshing herbed yogurt dressing.

Ingredients

  • 2 medium zucchinis, sliced into long strips
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 4 large tortillas or wraps
  • 1 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill or parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the Zucchini: Preheat your grill or grill pan over medium-high heat. Slice the zucchinis into strips, toss in a bowl with olive oil, salt, and pepper.
  2. Grill the Zucchini: Lay zucchini strips on the hot grill and grill for about 3-4 minutes per side. Remove and set aside.
  3. Make the Herbed Yogurt: In a small bowl, mix Greek yogurt, lemon juice, chopped herbs, and a pinch of salt.
  4. Assemble the Wraps: Start with a tortilla, layer grilled zucchini, chickpeas, feta cheese, and drizzle herbed yogurt on top.
  5. Wrap it Up: Fold in the sides of the tortilla and roll tightly. Optionally toast on grill for extra warmth.
  6. Serve and Enjoy: Cut wraps in half and serve with extra herbed yogurt on the side.
