A colorful and flavorful taco salad that’s easy to prepare, perfect for a quick weeknight dinner or festive gathering.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (canned or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1/2 cup salsa
  • Tortilla chips (for serving)
  • Sour cream (optional)

Instructions

  1. Sauté the ground beef in a skillet over medium heat until browned, breaking it apart as it cooks. Drain excess fat.
  2. Add the taco seasoning and water specified on the package to the beef. Stir and let it simmer, allowing flavors to meld.
  3. Combine the chopped romaine lettuce, halved cherry tomatoes, corn, black beans, shredded cheese, and diced avocado in a large bowl.
  4. Add the cooked taco beef to the salad mixture and toss gently to combine.
  5. Serve immediately with salsa and tortilla chips on the side. Optionally, add a dollop of sour cream.

Notes

Use ground turkey or chicken for a healthier option. Mix in different greens like spinach or kale for varied nutrients.
