Hearty ground beef filled zucchini boats, a comforting and visually appealing weeknight dinner option.

Ingredients

  • 4 medium zucchini
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the flesh to create boats.
  3. In a skillet, brown the ground beef over medium heat with the chopped onion and minced garlic until the beef is cooked through.
  4. Stir in the Italian herbs, and season with salt and pepper.
  5. Fill each zucchini boat with the beef mixture, then top with shredded cheese.
  6. Place the filled zucchini boats on a baking sheet and bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

Notes

To prevent watery zucchini boats, scoop out enough of the flesh and salt the insides before filling. Experiment with filling variations by using ground turkey or adding mushrooms and peppers.
