A quick and vibrant dish featuring ground turkey and colorful vegetables, perfect for busy weeknights.

Ingredients

  • 1 lb ground turkey
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Rice or noodles for serving

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the minced garlic and ginger to the skillet. Sauté for 1-2 minutes until fragrant.
  3. Mound the ground turkey into the skillet. Sprinkle with salt and pepper, and cook until browned, about 5-7 minutes.
  4. Stir in the mixed vegetables and soy sauce. Cook until the veggies are tender, about 5 minutes.
  5. Serve the stir fry over rice or noodles.

Notes

For added flavor, consider a splash of sesame oil or crushed red pepper. Leftovers keep well for 3 days in the fridge.
