Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into cubes)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • ½ red onion (sliced)
  • ½ cup Hawaiian BBQ sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the Grill or Oven to medium-high heat or 400°F (200°C).
  2. Combine the Hawaiian BBQ sauce, soy sauce, sesame oil, garlic powder, salt, and pepper in a mixing bowl.
  3. Toss chicken cubes, pineapple chunks, bell peppers, and onion in the marinade until well coated.
  4. Prepare four large pieces of aluminum foil, each about 12×12 inches.
  5. Seal the foil over the chicken and veggie mixture, ensuring packets are tightly closed.
  6. Cook the packets on the grill or in the oven for 20-25 minutes until chicken reaches 165°F (75°C).
  7. Serve over rice or enjoy straight from the packet.

Notes

For best flavor, marinate chicken for 30 minutes to an hour before cooking.
