Delicious Hawaiian chicken kabobs with tender chicken, sweet pineapple, and fresh vegetables, perfect for summer grilling.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into squares
  • 1 red onion, cut into squares
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Whip up the marinade by mixing soy sauce, honey, olive oil, garlic powder, ginger powder, salt, and pepper.
  2. Marinate the chicken by adding it to the marinade and letting it sit for at least 30 minutes.
  3. Preheat your grill to medium heat.
  4. Assemble the kabobs by threading the marinated chicken, pineapple, bell pepper, and onion onto the skewers.
  5. Grill the kabobs for 10-15 minutes, turning occasionally until slightly charred and cooked through.
  6. Serve and enjoy hot off the grill.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Feel free to replace veggies with zucchini, cherry tomatoes, or mushrooms.
