Delicious and fudgy brownies made healthier with black beans, providing fiber and protein without sacrificing flavor.

Ingredients

  • 1 cup black beans, rinsed and drained
  • 2 large eggs
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Blend the black beans, eggs, cocoa powder, honey (or maple syrup), applesauce, vanilla extract, baking powder, and salt in a blender until smooth.
  3. Stir in the chocolate chips, if using, ensuring they’re evenly distributed.
  4. Pour the batter into the prepared baking dish and spread it evenly across the bottom.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool before cutting into squares and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days or freeze for up to three months.
