Delicious and nutritious banana oatmeal cookies that are perfect for any time of the day.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/4 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a large bowl until chunky and creamy.
  3. Combine the rolled oats, peanut butter, honey or maple syrup, vanilla extract, cinnamon, and salt, stirring until well mixed.
  4. Add chocolate chips or nuts if desired.
  5. Form spoonfuls of the mixture onto a baking sheet lined with parchment paper, spacing them out.
  6. Bake for 10-12 minutes or until set and lightly golden.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Freeze for up to three months.
