Delightful granola cups filled with creamy Greek yogurt and fresh fruit, perfect for a healthy breakfast or snack.

Ingredients

  • 2 cups granola
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup Greek yogurt
  • 1 cup mixed fresh fruit (berries, banana, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the granola, melted coconut oil, honey (or maple syrup), and vanilla extract in a large bowl.
  3. Prepare a muffin tin by greasing it with coconut oil or non-stick spray.
  4. Form the granola mixture into cups by pressing it firmly into the muffin tin.
  5. Bake in the preheated oven for 10-12 minutes or until golden brown.
  6. Allow to cool completely in the muffin tin.
  7. Fill each granola cup with Greek yogurt and top with mixed fresh fruit.
  8. Serve immediately or refrigerate until ready to enjoy.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For a quick breakfast, these granola cups can be grabbed on the go!
