A simple and heartwarming recipe for chicken enchiladas that combines healthy ingredients without sacrificing flavor.

  • 2 cups shredded cooked chicken
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup low-fat shredded cheese
  • 8 whole wheat tortillas
  • 1 cup enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, black beans, corn, diced tomatoes, half of the cheese, chili powder, cumin, salt, and pepper in a large bowl.
  3. Fill each tortilla with the chicken mixture and roll them up tightly.
  4. Pour enchilada sauce generously over the top.
  5. Sprinkle the remaining cheese over the sauce.
  6. Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden.
  7. Serve warm and enjoy!

Notes

Leftover enchiladas can be stored in the fridge for up to 3 days or frozen for up to 2 months. Add fresh garnishes like cilantro or avocado for extra flavor.
