  • 1 lb (450g) chicken breast, cut into 1-inch pieces
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 medium onion, sliced
  • 2 cups broccoli florets
  • 1 medium zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the chicken by cutting it into 1-inch pieces, season with salt and pepper, and set it aside.
  2. Mix the seasonings by combining garlic powder, onion powder, dried thyme, dried rosemary, paprika, and chili powder in a small bowl. Sprinkle half over the chicken.
  3. Coat the chicken with ½ tablespoon of olive oil, tossing gently to evenly coat with the seasonings.
  4. Sauté the chicken in a large skillet over medium-high heat with 1 tablespoon of olive oil for 6 to 8 minutes until browned and fully cooked.
  5. Set the chicken aside on a plate, cover it to keep warm.
  6. Cook the sliced onions in the skillet with the remaining olive oil for about 2 minutes until softened.
  7. Add the broccoli, zucchini, and bell peppers to the skillet. If needed, add more olive oil and season with leftover spice mix, salt, and pepper. Sauté for 4 to 6 minutes until crisp-tender.
  8. Combine the vegetables with low-sodium chicken broth, stirring to meld flavors.
  9. Return the cooked chicken and its juices to the skillet, mixing gently, and cook for another minute.
  10. Final taste: Remove from heat, adjust seasoning if necessary.
  11. Garnish with chopped fresh parsley and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individual portions for up to 3 months.
