A wholesome flourless cake packed with oats and apples, ideal for breakfast, brunch, or dessert.

Ingredients

  • 2 cups rolled oats
  • 2 apples, peeled, cored, and chopped
  • 1 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (e.g., almond, peanut)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the eggs, applesauce, honey (or maple syrup), nut butter, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients, and gently fold in the chopped apples.
  5. Pour the batter into the prepared cake pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before slicing and enjoy it for breakfast or dessert!
