Fluffy and filling pancakes made with Greek yogurt and almond flour, perfect for a healthier breakfast.

  • 1 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray or oil for frying

Instructions

  1. Combine ingredients in a bowl: mix almond flour, Greek yogurt, eggs, baking powder, vanilla extract, and salt until well combined.
  2. Prepare the skillet: heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  3. Customize your pancakes: pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
