A delicious and wholesome zucchini bread recipe that combines the flavors of home with healthy ingredients.

  • 2 cups grated zucchini
  • 1 1/2 cups whole wheat flour
  • 1/2 cup oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup olive oil or melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the grated zucchini, honey, oil, eggs, and vanilla until well combined.
  3. Combine the flour, oats, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the nuts or chocolate chips if you’re opting for additional treats.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  7. Let it cool before slicing and serving.

Notes

For extra moisture, ensure to strain excess moisture from the zucchini if watery.
