  • 4 chicken thighs, boneless and skinless
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken thighs with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Sear chicken thighs for 5-7 minutes on each side until golden brown.
  4. Remove cooked chicken and keep warm.
  5. Add chicken broth, lemon juice, and capers to the skillet, scraping the browned bits.
  6. Simmer the sauce for 2-3 minutes to blend flavors.
  7. Return chicken to the skillet, spooning sauce over, and cook for an additional 2 minutes.
