A quick and easy hibachi chicken recipe that captures the flavors of a restaurant meal at home.

  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or on a griddle over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the garlic and ginger, cooking for another minute to intensify the aromas.
  4. Add the soy sauce, salt, and pepper, stirring to combine all the tasty elements.
  5. Add the vegetables and cook until just tender, about 3-5 minutes, allowing them to retain a bit of crunch.
  6. Serve the stir-fry hot over cooked rice or noodles, ready to enjoy every bite!

Notes

Make sure the oil is hot enough before adding the chicken to achieve beautiful browning. Don’t overcrowd the pan and feel free to swap out vegetables based on preference.
