Deliciously rich chocolate brownie bites packed with protein and made healthy with black beans and nut butter.

Ingredients

  • 1 cup black beans, rinsed and drained
  • 2 tablespoons cocoa powder
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend the black beans, cocoa powder, almond butter, honey, vanilla extract, salt, and baking powder until smooth.
  3. Stir in the chocolate chips with a spatula.
  4. Pour the mixture into a greased mini muffin tin or baking pan.
  5. Bake for 15-20 minutes or until set.
  6. Allow to cool before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
