Homemade Applesauce Muffins

Delightful and simple muffins infused with the warm flavors of applesauce, cinnamon, and nutmeg, perfect for any time of day.

Ingredients

  • 1 cup applesauce
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the applesauce, eggs, oil, and vanilla extract. Mix well until creamy.
  3. In another bowl, whisk together the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 3 months.
