A delicious vegan alternative to traditional salami, bursting with flavors and perfect for sandwiches or snacking.

Ingredients

  • 1 cup seitan
  • 2 tablespoons nutritional yeast
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup vital wheat gluten
  • 1/4 cup water

Instructions

  1. In a large bowl, combine seitan, nutritional yeast, soy sauce, olive oil, smoked paprika, garlic powder, onion powder, black pepper, and crushed red pepper flakes. Mix until well combined.
  2. Gradually add in vital wheat gluten and water, mixing until a dough forms. You want it to be semi-sticky but hold together.
  3. Knead the dough for about 5 minutes until it’s elastic and smooth.
  4. Shape the dough into a log and wrap it tightly in foil, pinching the ends to keep everything contained while steaming.
  5. Steam the wrapped salami for 30-40 minutes until firm.
  6. Let cool, then refrigerate before slicing to help the flavors meld.
  7. Serve cold in sandwiches or as a snack.

Notes

Store in the refrigerator for up to one week or freeze for up to three months. Experiment with spices for flavor variations.
