A cozy, one-pan meal featuring tender chicken in a sweet and savory sauce over orzo, perfect for chilly evenings.

Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 cup orzo pasta
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium-high heat. Season chicken thighs and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
  2. Toss in the minced garlic and sauté for 30 seconds, being careful not to burn.
  3. Add honey and soy sauce, then let it simmer for 2-3 minutes.
  4. Pour in chicken broth and add orzo, bringing it to a boil before reducing to a simmer. Cover and cook for 10 minutes.
  5. Mix in spinach and Parmesan cheese until spinach wilts and cheese melts.
  6. Return cooked chicken to the skillet and heat through for 2-3 minutes.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a lighter dish, consider using skinless chicken breasts instead.
