Delicious roasted vegetables glazed with honey and garlic, perfect as a side dish or main vegetarian delight.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the broccoli florets, cauliflower florets, sliced carrots, red bell pepper, and minced garlic in a large bowl.
  3. Drizzle the olive oil and honey over the vegetables, then sprinkle them with salt and black pepper.
  4. Toss everything together until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the oven for 20 to 25 minutes, turning halfway through until tender.
  7. Sprinkle with chopped fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to regain crispiness.
