A comforting and cheesy buffalo mac and cheese dish with a hint of sweetness from honey and spiciness from buffalo sauce.

  • 8 oz elbow macaroni
  • 1 lb Italian sausage (casings removed)
  • 2 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup buffalo sauce
  • 1/4 cup honey
  • Salt and black pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Boil the macaroni according to package instructions until al dente; drain.
  2. Brown the Italian sausage in a large skillet over medium heat, breaking it apart with a spatula.
  3. Sauté the butter and minced garlic in the skillet until fragrant.
  4. Stir in the heavy cream, buffalo sauce, and honey; bring to a simmer.
  5. Reduce heat, add cheddar cheese, stirring until melted and smooth.
  6. Season with salt and pepper; stir in the cooked macaroni until well coated.
  7. Serve immediately, garnished with chopped green onions.

Notes

For a spicier kick, add more buffalo sauce or crushed red pepper flakes. Freshly grated cheese melts better than pre-shredded.
