  • 4 boneless skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 limes, juiced
  • 1 tbsp honey
  • 1 cup long grain rice
  • 1 1/2 cups water
  • 1/2 tsp salt
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Whisk the Marinade: In a bowl, whisk together olive oil, minced garlic, ground cumin, paprika, 1 tsp salt, 1/2 tsp black pepper, juice of 2 limes, and honey to create a vibrant marinade.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they’re well-coated. Cover and refrigerate for at least 15 minutes or up to 2 hours for more flavor depth.
  3. Prepare the Rice: Meanwhile, rinse rice under cold water until the water runs clear. Combine rice, water, and 1/2 tsp salt in a pot and bring to a boil.
  4. Simmer the Rice: Reduce heat to low, cover, and simmer the rice for 15 to 18 minutes until most of the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  5. Fluff the Rice: Afterward, fluff the rice with a fork, then stir in the diced avocado, chopped cilantro, and juice of the remaining lime for an extra zest.
  6. Heat the Grill: While the rice is cooking, heat a grill pan or skillet over medium-high heat and lightly oil the surface to prevent sticking.
  7. Cook the Chicken: Cook the marinated chicken breasts for 6 to 7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (74°C).
  8. Rest and Slice the Chicken: Transfer the chicken to a cutting board, let it rest for 5 minutes, then slice into strips to keep the juices intact.
  9. Serve It Up: Serve the sliced chicken over the avocado rice, garnishing with extra cilantro or lime wedges if desired for that perfect finish.

Notes

For additional flavor, let the chicken marinate longer. Can substitute honey with agave syrup.
