1-Pot Creamy Honey Mustard Pepper Jack Chicken and Rice Comfort Food

A comforting one-pot meal combining tender chicken, fluffy rice, and a creamy honey mustard sauce with a kick from pepper jack cheese.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1 cup shredded pepper jack cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Combine rice and chicken broth in a medium saucepan. Bring to a boil, cover, and reduce heat to low. Let it simmer for 15–18 minutes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with garlic powder, onion powder, salt, and black pepper. Cook for 6–7 minutes on each side.
  3. Whisk together honey and Dijon mustard in a small bowl. Pour over chicken and let it simmer until sauce thickens slightly.
  4. Sprinkle pepper jack cheese over the chicken. Cover and cook for an additional 2–3 minutes until cheese is melted.
  5. Fluff the rice with a fork and serve topped with the creamy chicken and sauce. Garnish with chopped parsley.

Notes

For variations, feel free to use different cheeses or add extra spices for heat. Leftovers can be stored in the refrigerator for up to 3 days.
