Deliciously creamy and sweet stuffed dates topped with crunchy pistachios, perfect for any gathering or sweet craving.

  • 12 Medjool dates
  • 1 cup ricotta cheese
  • 1/4 cup honey
  • 1/4 cup chopped pistachios
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the Medjool dates lengthwise and carefully remove the pits.
  3. Combine ricotta cheese, honey, sea salt, and vanilla extract in a mixing bowl. Stir until smooth.
  4. Stuff each date with a generous dollop of the ricotta mixture.
  5. Top each stuffed date with chopped pistachios.
  6. Bake on a baking sheet for about 10 minutes until warmed through.
  7. Serve warm or at room temperature.

Notes

For easier stuffing, use a piping bag. You can add a dash of cinnamon or nutmeg for extra flavor.
