A delightful Mexican breakfast dish featuring crispy tortillas topped with fried eggs, black beans, salsa, avocado, and cheese.

Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 1 cup black beans, cooked and drained
  • 1 cup salsa (red or green)
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled queso fresco (or cheese of choice)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat olive oil in a skillet over medium heat and lightly fry each tortilla until golden brown, about 1 minute per side.
  2. Crack the eggs into the same skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  3. Assemble the dish by placing a fried tortilla on each plate, topping with black beans, a fried egg, salsa, avocado slices, cilantro, and cheese.
  4. Season with salt and pepper to taste and serve immediately.

Notes

For variations, consider adding sautéed peppers or swapping black beans with chorizo for extra flavor.
