A vibrant and hearty Mexican breakfast dish featuring crispy tortillas, refried beans, sunny-side-up eggs, and zesty salsa.

Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 1 cup refried beans
  • 1 cup salsa
  • 1/2 cup crumbled queso fresco (optional)
  • 1 ripe avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat a small amount of oil in a skillet over medium heat. Fry the corn tortillas until golden and crispy, about 1-2 minutes per side. Remove and place on paper towels to absorb excess oil.
  2. Fry the eggs in the same skillet to your desired doneness—sunny-side-up is typical.
  3. Warm the refried beans in a saucepan over low heat until heated through, stirring occasionally.
  4. Assemble by placing a tortilla on a plate, spreading refried beans, topping with a fried egg, and pouring salsa over it.
  5. Garnish with crumbled queso fresco, avocado slices, fresh cilantro, and a sprinkle of salt and pepper. Serve immediately.

Notes

For a spicier dish, add sliced jalapeños or use a hotter salsa. Store leftovers for up to 2 days in an airtight container.
