Ingredients

  • Corn tortillas
  • Eggs
  • Refried beans
  • Tomato sauce
  • Onion
  • Garlic
  • Jalapeños
  • Cilantro
  • Avocado
  • Lime
  • Salt
  • Pepper

Instructions

  1. Warm up the beans by heating the refried beans in a saucepan over medium heat. Stir occasionally until they’re warmed through and creamy.
  2. Fry the tortillas in a separate skillet with a bit of oil, lightly frying them until crispy.
  3. Cook the eggs in the same skillet until they reach your desired doneness, sunny side up being popular.
  4. Blend the sauce by combining tomato sauce, onion, garlic, and jalapeños in a blender until smooth. Pour into a saucepan and heat gently.
  5. Assemble the dish by layering a crispy tortilla with warmed refried beans, the egg, and the tomato sauce mixture, then topping with avocado, cilantro, lime juice, salt, and pepper.

Notes

To avoid soggy tortillas, do not skip the frying step. Customize with your favorite toppings like cheese or hot sauce.
