  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prepare the Marinade: In a bowl, mix together the soy sauce, brown sugar, ketchup, rice vinegar, minced garlic, ground ginger, and black pepper to create a deliciously fragrant marinade.
  2. Marinade the Chicken: Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. For optimal flavor, let them marinate for at least 1 hour or even overnight in the refrigerator.
  3. Preheat the Grill: When ready to cook, preheat your grill to medium-high heat. This will ensure a perfect sear on your chicken.
  4. Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. Enhance the Flavor: While grilling, brush the chicken with any remaining marinade to deepen the flavor. This step adds an extra layer of deliciousness that you don’t want to skip!

Notes

For a spicier kick, add crushed red pepper flakes to the marinade. You can substitute soy sauce with tamari for a gluten-free version.
