A simple yet flavorful Instant Pot Chicken Recipe featuring tender chicken thighs in a savory broth.

  • 2 lbs chicken thighs
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add the olive oil, letting it heat up until it shimmers.
  2. While the oil heats, generously season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
  3. Once the oil is hot, add the chicken thighs to the pot. Sear them for about 3-4 minutes on each side until they are beautifully browned.
  4. After both sides are golden, carefully remove the chicken thighs and set them aside.
  5. Pour in the chicken broth, using a wooden spoon to scrape up all those lovely browned bits stuck to the bottom of the pot.
  6. Return the browned chicken to the pot, ensuring that each piece is submerged in the broth.
  7. Secure the lid of your Instant Pot and set the valve to sealing. Cook on high pressure for 10 minutes.
  8. Once the timer beeps, let the pressure release naturally for 5 minutes, then carefully quick release any remaining pressure.
  9. Remove the chicken from the Instant Pot. If you’re feeling adventurous, shred it with two forks for a more rustic presentation. Serve it warm in a bowl with a ladle of broth over the top.

Notes

For additional flavor, consider adding lemon juice or fresh herbs. Leftover broth makes a fantastic base for soups.
