Delightful cupcakes that combine the rich flavors of chocolate and coffee, topped with cloud-like mascarpone frosting for a perfect portion of tiramisu in every bite.

  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Beat the butter and sugar until fluffy, then add the eggs and vanilla.
  4. Combine the dry mixture with the wet mixture, alternating with the cooled coffee.
  5. Fill the cupcake liners about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Prepare the frosting by beating together mascarpone, heavy cream, and powdered sugar until smooth.
  8. Frost the cooled cupcakes with the mascarpone mixture.
  9. Dust with cocoa powder before serving.

Notes

For a flavor boost, consider adding coffee liqueur to the frosting. Make sure the butter is softened for easy mixing. Store leftovers in an airtight container.
