A comforting and flavorful classic Italian soup made with vibrant vegetables and tender chicken.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups homemade chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the homemade chicken broth and bring to a boil.
  5. Gently fold in the shredded chicken, dried thyme, dried oregano, salt, and pepper.
  6. Reduce the heat to low and let it simmer for about 20 minutes.
  7. Serve in bowls and garnish with fresh parsley.
